You're not an independent contractor if they're telling you what to do – i.e. not letting you opt out of features you do not want to participate in such as Line/Pool/Eats or whatever.
This is depends upon the current market. Door Dash and Grub Hub are not in Vegas at this time. Postmates is the main player in Vegas at the moment.
